Mentaiko – a common ingredient in Japan which is orange in colour with a spicy and salty taste. For easier understanding, it is the roe of cod. There are many brands of mentaiko in Japan, but I would like to introduce Kanefuku specifically.
Established in 1971, Kanefuku has been passionate about mentaiko production since then. With the commitment to “the best coming from the best raw material”, perhaps none of the processes (from purchasing to manufacturing) has been outsourced. With their secret techniques, the best-finished product has been served to us.
Talking about their products, you might think they have a narrow range of products because they specialise in mentaiko, but you are wrong if you think so! For example, you can buy mentaiko-flavoured mayonnaise. With the spiciness of mentaiko, it is perfectly paired with salad and seafood. My best buy is the sausage snack, which is snack sausage filled with mentaiko in the middle. It is not very fishy but has a hint of spiciness and is very refreshing! They have a lot more but I will leave the surprise to discover by yourself!
If you would like to know how to make mentaiko, why not go to Mentai Park in Japan? It is open to the public and free of charge. Not only limited to study about mentaiko but you can also visit their factory! I firmly believe it will be a great experience if you are travelling to Japan!
